5 . 1 . 1 . Provide staff that meet the requirement of 42 CFR § 483 . 60 ( a ). 5 . 1 . 2 . Provide community - based nutritional education , nutritional analysis , menu modification , analysis , counseling and education . 5 . 1 . 3 . Preparing and modifying materials used for nutritional education . 5 . 1 . 4 . Recommending for purchase or acquisition nutritional education materials for Veteran / Members and / or staff education . 5 . 1 . 5 . Review proposed menus for balance and physical nutritional adequacy . Make recommendations and adjustments in agreement with the food Manager . 5 . 1 . 6 . Provide Nutritional Analysis for menu cycle with weekly summaries . 5 . 1 . 7 . . Create a diet and diet extensions for medical ordered diets . ADVS Medical Director shall approve the suggested medical diet . 5 . 1 . 8 . Consult with physicians and nursing personnel to determine and meet nutritional needs and diet restrictions of Veteran / Member . Complete Minimum Date Set ( M . D . S .) and Care Area Assessment ( C . A . A .) / Resident Assessment Instrument ( R . A . I ). and care plans and updates . 5 . 1 . 9 . Advise and manage Veteran / Members and their families on nutrition values , plans and diet modifications , and food selection and preparation . 5 . 1 . 10 . Monitor food service operations and meal service to ensure conformance to nutritional , safety , sanitation and quality standards .
